Sautéed Chard and Eggs

Hi Folks. 🙂 Welcome to my little corner of the web. I set up this blog so I could share some of my recipes with you. Recently I’ve become more aware of what I’m putting into my body, not only in terms of healthy food VS junk food, but regular VS Organic products. Most of the time I am an Organic girl, but I don’t have (too much of) a problem using regular products when necessary. But, I won’t ramble too much about that just now. Another big inspiration for this blog is the fact that I’ve been getting a box of local produce from a great organization called Chow Locally. Chow Locally drops off a box of varied local organic produce at my local Market that I pick up once a week. The box is never the same, which I find to be kind of fun. It’s like my own personal version of Iron Chef. 🙂 One of my go-to dishes for dinners has been sautéed greens with over-easy eggs. This is a healthful, filling dish that can easily be a an easy breakfast or a quick dinner.

If you’re new to greens, Chard is one of the easiest to eat. It’s not only mild but it is chock full of nutrients like Vitamin C, Vitamin A, many of the B vitamins, and Vitamin A as well as Potassium, Iron, and Calcium. Get it fresh and sauté it for only a few moments and you are rewarded with buttery textured greeny goodness. This dish is also very good with garlicky Kale or Spinach.

Okay, so before I talk your ear off, here’s the goods:

Sautéed Chard and Eggs

Ingredients:

1 bunch of Chard, chopped (any kind will do Rainbow Chard is especially pretty!)
2 spring onions, sliced or 2 cloves of garlic, minced (I used the spring onions)
1 tbsp balsamic vinegar
1 tbsp olive oil
4 eggs over easy
Salt and pepper to taste

Directions:

Prepare the veggies. Slice the spring onions or mince the garlic. Wash and chop up the chard. You can eat the stems too! Just slice them up. I usually cut the leaves in half and then cut them into approximately 1″ pieces.

Heat the olive oil in a large sauté pan over medium heat.

Add in the spring onions (or garlic), saving some of the green tops for garnish.

Stir, coating in the oil and cook until fragrant (only a few seconds for the onions while the garlic will take a little longer). Add in your chopped Chard, along with the salt and pepper. Stir to coat the Chard in the oil. Cook just until the chard begins to wilt and then add the balsamic vinegar. You can add more vinegar to taste, if you’d like a little more zing in your greens. =)

While the chard is cooking prepare the eggs.

Serve the eggs over the Chard and ENJOY!

I usually eat this with a side of toast, and if you’d like a more substantial meal, try making some fried potatoes, a baked potato, or even a baked sweet potato.

This recipe serves two, and can be easily doubled to serve four.

  1. That looks delicious – the egg finishes it off really nicely. I love the idea of a box of greens – I think I shall start ding it once I’ve moved in a couple of months. I like the way they come locally too.

    • Kale is great with this! I usually smash a couple of cloves of garlic and toss them in the pan with some red pepper flake and olive oil before adding the kale with some water to braise for about 10 or so minutes. So yummy!
